Maple Teriyaki Grilled Chicken

4 boneless, skinless chicken breasts
1/3 cup maple syrup
1/3 cup apple juice
3 Tbsp soy sauce
2 garlic cloves, minced
2 Tbsp onion, chopped

Mix together maple syrup, apple juice, soy sauce, garlic and onion.  Pour over chicken and marinate in refrigerator 2-3 hours.  (I only marinated mine for about 30 mins. and it was good but I'm sure the longer the better!)  Grill chicken over med-hi heat.  Serve over rice.

I took my marinade and poured it into a saucepan and boiled it for about 5-10 mins and added a little cornstarch to thicken slightly.  Then I topped the rice with the chicken and poured the sauce over the top.  Yum!
